Graze Southern Highlands

Richard and Graze Southern Highlands will be doing demonstrations at the Paddock To Plate Stage daily at 11am and 1pm.

Hello! I’m Richard Robinson, Chef Director at Graze Southern Highlands, and after 25 years working around the world in some of the best kitchens and establishments, I’m thrilled to finally call the Southern Highlands Home.

I’m originally from the northeast of England, and I’ve had a passion for food for as long as I can remember – it’s in my blood. My father was the one who first inspired me to cook, and my oldest brother is also a chef. Food has always been at the heart of my world, long before I ever stepped into a professional kitchen.

I’ve spent my entire adult life in kitchens across the globe – from 3 Michelin-starred restaurants to bustling bistros, boutique lodges, and large-scale hotels and casinos. I’ve done it all, from boutique fine dining to major events.

That journey eventually led me into restaurant development and consultancy, where I opened six restaurants in just two years and worked with some of Australia’s biggest food companies. Food isn’t just my career – it’s my life, and my never-ending passion.

I created Graze Catering to showcase the finest produce of the Southern Highlands and celebrate other passionate producers and farmers to inspire and show our customers what great food is… After all, The Southern Highlands is a world-class culinary destination, we just need to let the world know

Dawning Day Farms

Mike and Katrina from Dawning Day Farms will be doing demonstrations at the Paddock To Plate Stage daily at 12pm.

Mike and Katrina Archer are the owners of Dawning Day Farms, a small family owned and operated micro-vineyard located in Exeter in the Southern Highlands of New South Wales.

Mike loves to grow grapes to make wine, and this cool climate region called for planting varieties like Chardonnay and Pinot Noir and Mike’s personal favourite, Gamay. Together they have created a boutique cellar door on their 7 acre property and a home away from home for visitors.

Katrina is a gardener and cook and they have also established an extensive vegetable patch and food forest. Katrina enjoys pickling homegrown produce and in 2022 & 2024 she won a Gold Medal for her Hot-House Chilli Pickles and a Silver Medal for her Farmhouse Original Pickles at the Sydney Royal Fine Food Show.

Katrina & Mike are the parents of three beautiful teenagers and have two resident Border Collie dogs, Kevin and Jodie, and a cat named Tony, favourites at the cellar door.
